How to Prepare the Pizza Dough Mix

Make perfect homemade pizza with our delicious pizza mix and easy-to-follow instructions for hand-kneading, stand-up mixer, or pizza oven methods, yielding two delicious 12-14 inch pizzas. Enjoy a golden crust and melted cheese in no time!

In a large bowl or bowl of your stand mixer, empty the dough mixture and add the yeast packet contents.

Add 1 1/4 cups (290g) of cold water. Mix well, then add olive oil packet.  Mix for 8 minutes (knead for 10 minutes if you’re doing it by hand).

Cover the bowl with a towel or plastic wrap and let the rise around 90 minutes or until doubled in size.

Degass dough and carefully divide into two equal parts. If you have a kitchen scale just weight the dough prior to cutting, take that number and divide by two.

Start with your portioned dough. Lightly flour your hands and the surface, but don’t overdo it, you want just enough to prevent sticking.

Cup your hands around the dough and begin tucking the edges underneath, rotating as you go. You’re creating surface tension across the top, which helps with structure during fermentation. Keep rotating and tucking until the top is smooth and the seam is gathered underneath.

Once it’s tight and round, let it rest seam-side down. The result should be a smooth, elastic dough ball with good tension.

Place the dough balls on a small tray, lightly oil the tops of dough, and cover with plastic wrap. Or place each ball into an oil lined plastic container with tight lid.

Decision time: If you are going to use the dough to make pizza the same day, let rest for 60-90 minutes at room temperature.

However, for optimum taste, we recommend you instead place the tray into the fridge for 24-72 hours.  This will give the dough time to ferment and enhance the flavor and chew of your crust.

If the dough has been in the fridge, place it on the counter and let it warm up for 90 minutes before stretching.

You can pre-heat the oven 500°-550° F If using a baking stone or steel give it 45 minutes to fully come to temperature.

 

Lightly flour your work surface and press the dough from the center outward with your fingertips, pushing air toward the edges to form a natural crust.

Once it’s flattened, lift the dough onto your knuckles, not your fingertips & let gravity assist. Gently rotate and stretch, allowing the weight of the dough to do most of the work. Aim for an even thickness in the center with a slightly thicker crust.

Add half of the included pizza sauce or approximately 4-5oz of your own. Sprinkle a little parmesan cheese then top with mozzarella and your favorite toppings.  Add a pinch of the included Italian herb mix or just a little salt, pepper & oregano. 

Place the pizza on the center rack in the pre-heated oven on top of a baking stone or steel if you are using one.

Bake for 8-10 minutes or until your liking.

TIPS & TRICKS:

Rest the Dough: Before shaping the dough into its final pizza shape, let it rest for about 10-15 minutes. This will make it easier to stretch into a circle.

Use Warm Water: Ensure the water is warm (about 110°F) to activate the yeast properly.

Preheat the Oven: Preheat your oven or pizza stone to the desired temperature to ensure a crispy crust.

Flour Your Surface: Lightly flour your work surface to prevent the dough from sticking while kneading and shaping.

Don’t Overload Toppings: Avoid overloading your pizza with toppings to ensure it cooks evenly and the crust remains crispy.

Cool Before Slicing: Let the pizza cool for a few minutes before slicing to allow the cheese to set slightly.
